Bring on the Burritos!!

National Burrito day is April 1st and we want to help you celebrate by giving you a few tips on Burritos! Burritos are very versatile, you can have them for breakfast, lunch, or dinner! Here at Cuisine for Healing, we offer a Breakfast Burrito and a Burrito Bowl that includes all of the ingredients a classic Burrito would have.

Burritos are a staple of Mexican food and are often different than burritos made in America. In Mexico Burritos are smaller and simpler, often only containing two ingredients—meat, potatoes, rice and beans, cheese, or Chile Relleno. The classic American Burrito originates from San Francisco and became incredibly popular in San Francisco’s Mission District during the 60s and 70s. These “super burritos” contain rice, sour cream, guacamole, meat, cheese, and beans.

Burritos are a great option for any diet. They can be made vegetarian, vegan, gluten-free, or dairy-free! You can add any vegetable to your Burrito to add more flavor and color. Some popular substitutions are cauliflower rice instead of white rice, corn tortilla instead of flour, Greek yogurt instead of sour cream, or the addition of spinach with your choice of lettuce. Get creative with your burrito! We have included our Breakfast Burrito recipe below to help you celebrate April 1st!

 

Cuisine for Healing Breakfast Burrito

Ingredients:

– *Ground Sausage*

  • 1⁄2-pound ground Turkey
  • 1⁄2 teaspoon salt
  • 1⁄2 teaspoon garlic powder
  • 1⁄2 teaspoon Onion powder
  • 1⁄2 teaspoon Italian Seasoning
  • 3⁄4 teaspoon ground sage
  • 5⁄8 teaspoon fresh chopped basil
  • 1⁄2 teaspoon ground fennel
  • 1⁄2 teaspoon ground thyme
  • 5⁄8 teaspoon paprika
  • 2 1⁄2 teaspoon olive oil

– Egg filling

  • 4 7⁄8 eggs
  • 1⁄2 cup Red Onion
  • 1⁄2 cup Red Bell Pepper
  • 1⁄2 cup Green Bell Pepper
  • 1⁄2 cup Yellow Bell Pepper
  • 4 Stacy’s tortillas
  • 1⁄2 cup Cheddar

Directions:

  1. Cook ground turkey on low heat until brown. Add herbs and seasonings to turkey sausage and mix well.
  2. Next, wash and dice the vegetables. Sauté vegetables on medium-low heat for 5-10 minutes or until tender.
  3. Next, whisk the eggs in a bowl. Add the eggs to the vegetable mix. Cook eggs and vegetables on low heat until scrambled. Add sausage back into the scrambled eggs and mix well.
  4. Assemble tortilla with sausage, egg, and vegetables. Serve warm.
