Fall Fruits and Vegetables

Trying to find the perfect fruits and vegetables for this fall? When you shop for fruits and veggies in season, they are often cheaper than produce that is out of season. It is also a great idea to find a local farmers market in your area to support local small businesses. Produce at the local farmers market will often be in season and the prices are usually very reasonable!

  • Brussel sprouts
  • Edamame
  • Eggplant

Cuisine for Healing Delectable Apple Carrot Muffin is the perfect Fall Muffin!

  • Ingredients: (serves 8)
  • 1 Cup Mashed Banana
  • 1 Cup Sweet Potato
  • 1/3 Cup Honey
  • 1/2 Cup Diced or shredded Carrot
  • 1/2 Cup Diced or shredded Apple
  • 2 Tsp Vanilla Extract
  • 2 Eggs
  • 1 Tsp Cinnamon
  • 1/2 Tsp Salt
  • 1 Tsp Baking Soda
  • 1 Tsp Baking Powder
  • 1 3/4 Cup Oat Flour
  • 1 Tsp Fresh Ginger
  • 1/2 Tsp Turmeric

Directions:

  1. Peel the skin off your sweet potatoes and dice into small pieces and bake until soft enough to be able to blend.
  2. In a blender add your oat, salt, baking soda, baking powder, cinnamon, and turmeric until well incorporated and resembles flour and pour into a bowl.
  3. Then add your banana sweet potato, honey, eggs, and vanilla into a blender and blend into a smooth texture.
  4. Add your blended mixture to your bowl then dice your apples and carrots and add to your bowl as well as your grated ginger and stir until it creates a batter.
  5. Then divide equally into a lined muffin tin and bake at 350 degrees for 20 minutes or until fully cooked.
