Scrumptious Spinach

In honor of National Spinach Day, we wanted to pay homage to our favorite leafy green (sorry kale). What’s not to love about spinach? It’s packed full of vitamins and minerals like Iron, Calcium, and vitamin K and it is so versatile it can be eaten fresh or cooked. Incorporating a couple of cups of spinach into your daily diet is a great way to add a nutritional boost. Spinach is great for smoothies, lasagna, salad, pesto, burgers, or soups, the possibilities are almost endless.
Here are some fun facts about spinach and a sneak peek at one of our new salads coming soon on our spring menu.
  • Spinach farmers of the 1930s credited the fame of Popeye the Sailorman for a 33% boost in spinach consumption which was much needed during The Great Depression.
  • In the medieval days, artists used to extract green pigment from spinach to use as ink or paint.
  • Spinach is packed full of antioxidants which helps fight oxidative stress.
  • Spinach can improve eye health, increase cancer prevention, and reduce blood pressure.
  • There is more potassium in spinach than in bananas. Potassium helps with digestion and muscular functions.

Cuisine for Healing Balsamic Roasted Chicken Caprese Salad

Chicken Ingredients
2 Cups Chicken Breast
1 tsp Italian Seasoning
1 tsp Olive Oil

Salad Ingredients
8 Cups Spinach
2 Cups Cherry Tomatoes
14 Cup Basil

Dressing Balsamic Vinaigrette
12 Cup Olive Oil
14 cup Balsamic Vinegar
12 tsp Honey
1 tsp Dijon Mustard
1 tsp Minced Garlic
(set some vinaigrette aside for the salad dressing), coat the chicken completely with the mixture and marinate for 30 minutes.

Bake the marinated chicken for 15 minutes at 350, or until the chicken reaches an internal temp of 165.
Prepare the salad base by halving the tomatoes and chopping the basil. Cut the chicken in a large dice once it has cooled. Assemble salad, starting with spinach add the cherry tomatoes, and basil. Top with the balsamic chicken and serve with mozzarella and extra balsamic dressing if desired.
