Spectacular Spaghetti Squash

Spaghetti squash is a versatile vegetable that can appear in a vibrant yellow or bright orange color. Delicious AND healthy, spaghetti squash is used in a variety of cuisines and available year round.  One of the unique features of this vegetable is its’ resemblance to angel hair pasta.  Simply cook the squash and then fork-scrape the inside to create this pasta substitute. Whether you roast it, boil it or steam it, this vegetable is something the whole family can enjoy.

Spaghetti squash originated in Central America, but spread to the rest of the world via trade routes in the 1800’s. Japan was able to develop and improve the squash where it was then commercially distributed in the 1930’s.  The U.S. acquired the improved version of the squash in 1936 but it remained unpopular until the 1970’s and 80’s. Now spaghetti squash is available in most countries around the world and enjoyed in a variety of dishes.

This nutrient dense squash stands out among other vegetables as it contains good amounts of vitamin A, Folate, beta-carotene, potassium and fiber.

  • Vitamin A is important for immune system and organ function, vision, and cell division.
  • Folate, also known as vitamin B9, is extremely important for woman during pregnancy as it reduces the risks of birth defects and plays a role in red blood cell formation.
  • Beta-carotene is the red orange pigment found in plants, it is an antioxidant that is converted into vitamin A by the body.
  • Potassium is an electrolyte that helps maintain hydration of our body’s cells while also assisting in muscle contractions and healthy blood pressure.
  • Fiber is important for healthy digestion as it assist in moving food through the digestive system.
