The Health Perks of Dark Chocolate

National Dark Chocolate day is February 1st, to celebrate we wanted to shine the spotlight on one of our favorite culinary delights and share some recipes just in time for Valentine’s Day.  Dark chocolate, with its decadent flavor and velvety texture, has long been cherished as a timeless treat. Beyond its delectable taste, dark chocolate boasts a rich history and a plethora of health benefits that take the guilt out of this pleasure.

The Origins of Dark Chocolate:

Chocolate, derived from the cacao bean, dates back to ancient civilizations. The Olmec civilization in Mesoamerica is credited with cultivating the first cacao plants around 1500 BCE. The Mayans and Aztecs further developed the use of cacao, creating a frothy and bitter beverage reserved for nobility and religious ceremonies. It wasn’t until the Spanish brought chocolate back to Europe in the 16th century that sweeteners were added; transforming it into the treat we know and love today.

Benefits of Dark Chocolate:

  1. Rich in Antioxidants: Dark chocolate is a potent source of antioxidants, including flavonoids and polyphenols. These compounds help combat oxidative stress in the body, protecting cells from damage caused by free radicals.
  2. Heart Health: Consuming dark chocolate in moderation has been linked to cardiovascular benefits. Flavonoids in dark chocolate may contribute to improved blood flow, reduced blood pressure, and a decreased risk of heart disease.
  3. Mood Booster: Dark chocolate contains various compounds that can stimulate the production of the “feel-good” hormones, endorphins. Additionally, it contains a small amount of caffeine, contributing to increased alertness and improved mood.
  4. Brain Function: The flavonoids in dark chocolate may also have positive effects on cognitive function. Some studies suggest that regular consumption could enhance memory and slow down age-related mental decline.
  5. Mineral Rich: Dark chocolate is a good source of essential minerals such as iron, magnesium, and copper. These minerals play crucial roles in various bodily functions, including oxygen transport, bone health, and energy production.

Homemade Dark Chocolate Chips

  • 2 Cups Cocoa Powder
  • 14 Cup Coconut oil
  • 14 Cup Honey
  • 3 Tbsp Corn Starch
  1. Melt Coconut oil, then whisk honey in until fully incorporated. Whisk in the corn starch and Cocoa until there are no more clumps. Should have a dough-like texture.
  2. Flatten out mixture onto a lined tray and place in freezer, once frozen chop into chunks or break off pieces into the food processor.
  3. Toss chocolate chunks in cocoa to keep them from sticking, and store in the freeze until needed.
  4. Alternate option: Add coconut, nuts, dried fruit or topping of choice and cut into squares for homemade chocolate bars.

 

Almond and Coconut Chocolate Truffle

Serves 8:

  • 13 cup Coconut Butter
  • 13 cup Honey
  • 38 cup Oat Flour
  • 13 cup Cocoa Powder
  • 6 teaspoon Almonds Chopped fine
  • 13 cup Shredded Coconut
  • 13 cup Shredded Coconut (for rolling)
  1. Wisk together oat flour, cocoa powder, coconut, and almonds. Then mix in coconut butter and honey.
  2. Scoop out and roll into 1 inch balls, then roll in shredded coconut.
